Food and BeverageOur Executive Chef Ginny Thiell and fine catering staff at Marcum Conference Center & Miami Inn prepare a wide variety of food utilizing the freshest and highest quality ingredients available. Fresh herbs are grown for us in a greenhouse adjacent to the conference center. Our menu features a variety of buffets and meals for breakfast, lunch and dinner, and an extensive array of hot and cold hors d'oeuvres.

Come and sample our Maple Glazed Salmon, Citrus Tarragon Chicken, or on the heartier side, our Italian Merchants buffet or our Carved Top Round with Herbed au Jus as part of our Rappahannock buffet. We offer a number of delicious vegetarian dishes, such as Artichoke and Leek Turnover in a Red Pepper Sauce. The food is exceptional as is the service, presentation and value. Our Tavern at The Miami Inn features micro-brewed beers, fine wines and a great selection of scotches and other spirits. We will design a variety of dining experiences just for your group - whether it is a grill-out on the patio at The Miami Inn, a casual lunch in the Courtyard, a picnic at the Gazebo, or a formal dinner or wedding reception in our beautiful facility.
